It isn’t too soon for pumpkin spice everything, right? I used to scoff at millennials’ obsession with pumpkin spice until I realized that I as just as in love with it as everyone else, so I embraced pumpkin spice everything, especially these pumpkin spice scones! They are a lot easier to make than a traditional scone, so if you have never baked before, this is a great recipe to get started!

Therefore, I thought pumpkin spice scones would make a delicious dessert for fall. This recipe is easier than many scone recipes because it uses melted butter, rather than working the butter into the dough with a pastry fork. Yes, it does alter the texture of the scone somewhat, but I have found that I make them a LOT more often if they are easy and quick and- I can assure you this pumpkin spice scone recipe is very easy. I can whip these scones up in less than ten minutes. As a bonus, these scones are egg-free so Katherine can eat them with her egg allergy.

Here is the recipe:

Easy Pumpkin Spice Scones

3 1/2 cups Flour

1/2 cup Sugar

1 tps Baking soda

1/2 tps Baking powder

1/4 tps Salt

1.5 tsp Powdered ginger

1.5 tsp Cinnamon

1/4 tsp Cloves

8 Tbsp (one stick) melted unsalted butter

3/4 cup of milk + 1 tbsp lemon juice (mix them together first to curdle the milk)

1 cup canned pumpkin

Mix the dry and wet ingredients separately. Combine the dry and wet ingredients mixing as little as possible, until it forms a dough. Divide the dough into two balls, pat into a circle and cut (as shown in photo)

Bake 400 for 18-20 minutes

As a side note, I have been using these baking pans for years now. I have made countless cookies, pizzas and all sorts of things with them. They are the BEST pans that I have ever used. I usually pair them with a re-usable silicone baking mat, or parchment paper. The aluminium is very durable, cooks evenly and is all around the best pan I have ever had. (I have been baking since I was a little girl- so that is a lot of pans!) I use a baker’s half sheet which optimizes oven space.
