Is this a bar? A cookie? Frankly, I don’t know what to call it but it is delicious, and dare I say- healthy? It uses cacao powder which is a super-food and the sweetener comes from ground dates.

Chocolate spice candies (Paleo and vegan):

2 cups of melted coconut oil

1 1/2 cup of dates

3 cups shredded coconut

1 1/2 cup cacao powder (or cocoa powder)

1 tsp cinnamon

1 tsp ginger

1/4 tsp cloves

1/4 tsp nutmeg

Blend the dates and coconut oil in a food processor (or your Vitamix) until the dates are chopped to fine pieces. Next, mix all dry ingredients together separately. Add coconut oil/dates to the dry ingredients and mix thoroughly. Fill ice cube trays with the “dough” and freeze.

I could eat these all day long!
